Chambar

Chambar...oh how I love you.  When I think of Chambar, words completely disappear and all I get is a feeling.  A mix of excitement, anticipation, happiness, comfort, something special and something delicious all at once.  To me, Chambar is one of those very special restaurants in Vancouver that is a step above in every single respect.  Its food is sublime, the service is unreal, you are as comfortable as you would be in your neighbourhood pub but you're in a high-end restaurant and are being catered to at every moment...it is truly a treat to eat there.  Chambar is hands down one of my favourite restaurants in Vancouver. 

So, when my dear friend said she wanted to go to Chambar for her birthday, the little kid inside of me did a happy dance at the thought of getting to go there for dinner. 

For those of you who have been there before, I know your salivary glands have started working overtime, so do yourself a favour and treat yourself to a night out.  For those of you who haven't been there, go home, cross out the top restaurant on your "must-try" list, and replace it with Chambar.  It's a must.

I have to apologize as the photos don't do the food half the justice that it deserves and I didn't take half as many photos as there were delicious meals.  I got too caught up in enjoying the fun of the evening and meeting some lovely new people!  The bottom line: whatever you order, you can't go wrong.

Salade agre-douce: Belgian endive, golden beets, grapefruit, lingonberries, picked greens, burnt bread, buttermilk honey and citrus vinaigrette.  ($12).  This looked divine! 

My Congolaise Moules Frites: mussels, tomato coconut cream, smoked chili, lime, cilantro.  ($23)  Oh Congolaise Moules Frites...the world wouldn't be the same without you!  I absolutely love this meal and when I say love it's an understatement.  The only thing that is wrong with this dish is that you don't get a loaf of bread with it to sop up all of the delicious broth after you've polished off the mussels.  Note: this portion is not for the weak of heart.  Every time I've had it, I've questioned whether I'm going to be able to finish my plate...and that's a rarity!  PS - I don't know how they make their fries, but even they are abnormally delicious! 
 
My Sandwich GlacĂ©e.  Imagine sour cherry ice cream shaped into an ice cream sandwich patty, with a thin layer of crushed peanuts on either side and a disc of heavenly chocolate on top, sat beside a line of sour cherries, toasted meringues, peanuts, and peanut butter mousse.  Heavenly!  ($11)

Butter from another mother...

A couple of weeks ago, a fabulous friend of mine messaged me and said that she'd made too much almond butter and was wondering if I wanted some.  Now, I had heard of this new fangled business called almond butter but had never tried it.  However, I'm definitely not one to turn down home-made food offerings!

Let me tell you, it's very yummy!!  She warned me that it's a bit of an acquired taste, but I liked it right off the get go.  It's definitely very different than peanut butter...imagine almond flavour in a peanut butter consistency...and I don't think I will ever fully give up my peanut butter, but I'm definitely more open to having almond butter on hand since it's much more healthy than peanut butter.

The best part is that my fabulous friend agreed to part with her super easy recipe!  She actually found it on the Detoxinista's blog (link included below).

Ingredients
  • Almonds
Roast the almonds at 350F for 15 minutes.  Place the roasted almonds in your food processor (not a blender).  Blend for about 15 minutes.  Depending on the type of food processor, you're likely to have to stop the blending and scrape every once in a while to ensure there aren't any chunks.  Keeps in the fridge well.

The Daily Catch

When I'm trying to decide which food truck to check out for lunch, I generally check the Vancouver Street Food App to see what's open that day.  It's super handy since the trucks move around quite a bit.  The only thing is that it can be torturous at times...showing that those food trucks you've been dying to try are open...they're just not anywhere near you!

So, when I was meeting up with a friend last week and checked to see what our options were, I was ecstatic to find The Daily Catch was downtown!  It quite often resides out in the Commercial area.  As a result, it didn't take much for both of us to be convinced to check this food truck out...and it definitely kept up to its promise of delivering a daily catch.  Cue the photos...

Where the magic happens.

My friend's Tacos: crispy panko-crusted cod, shredded cabbage, tomato salsa, and chipotle aioli, served in a soft corn tortilla.  ($8 + tax)  These looked delicious, and my friend said they were delicious.  However, they'd be better for a light lunch than an "I'm famished" lunch.  My friend said it was enough for her for lunch, but I was famished that day and I probably would have needed at least three, if not four, to fill up.

My 1 piece Cod and Chips: Westcoast ale battered cod, served with truckmade fries, coleslaw, tartar and a quarter of a pickle.  ($7.50 + tax)  If it's fish and chips that you're after, this is definitely a great place to grab it from.  The fish itself was piping hot and perfectly fried, the fries actually tasted like homemade fries (they were awesome), the coleslaw was nice and refreshing with just the right amount of dressing and the pickle was a fabulous touch.  Not to mention it was a good bang for your buck.  I don't think I've ever been able to order fish and chips under $10.  To top it all off, they have five different types of vinegar to choose from...from the classic malt vinegar to jalapeno vinegar.  Definitely added some extra entertainment to my fry consumption.

Put da lime in da coconut...

A couple weeks ago, a fellow in my office saw me getting my Holy Crap cereal ready in the kitchen, to which he said "What is that crap?"  So, I answered, "Actually, it's holy crap."  He didn't seem very enthused about the idea of trying some himself, but a couple of days later he made a point of telling me that I'm supposed to eat chia seeds with lime juice.  He wouldn't tell me how he knew this, but he insisted on it.
 
So, as I'm sure you guessed, curiosity killed the cat and I turned to Google.  Turns out that Chia Fresca (a mixture of chia seeds, water, lime juice and sweetener) has been a popular natural energy drink in Mexico and South America for quite some time. 
 
So, I figured I'd do some experimenting and try it with my holy crap cereal.  I mixed 4 tbsp homemade holy crap, the juice of half a lime, and about a cup of water. I shook it up good and let it hang out overnight in the fridge.  When I ate it as part of my morning snack the next day, I thoroughly enjoyed it!  It was light, refreshing, and very tasty.  So, if you're looking to mix up your holy crap consumption, I definitely recommend trying this out.

Brunch at Fable

If you're looking for a new place to try for brunch this weekend, look no further than Fable.  I went there for brunch recently and, as always, it was absolutely lovely!  Fabulous atmosphere, great company, delicious food and wonderful presentation.  If you haven't been to this lovely restaurant, you're missing out.  

The Scrambled Eggs: Scrambled eggs served in a canning jar, topped with wilted spinach, real bacon and parmesan foam, served with Curtis' brioche and rosti.  ($12)  Delicious!  And so much fun to eat scrambled eggs out of a canning jar.

Date 2 with Jamie...he asked me out again!

Back in the good old days of university, I ended up rooming with a very good friend of mine in the greatest apartment ever!  I know you probably think I'm exaggerating, but this apartment rocked.  Old school wood floors, five rooms, full kitchen, full living room, a ghost (no joke)...I even decorated my entire room with glow in the dark stars (probably should have warned the guy who moved in after me about those). 
 
Anyways, my good friend and I made many a meal together in that kitchen.  Some turned out great...others not so hot.  My favourite would have to be the time we tried making spanish rice.  Her new boyfriend was coming over for dinner for the first time, so we decided to go all out.  We followed the recipe verbatim: put the rice, chicken broth, raw bacon, minced onion and all sorts of bits and pieces into a pyrex casserole dish.  The recipe told us to put it on the stove, bring it to a boil, and then put it into the oven.  So, we did as they asked.  As we pop it on the oven and start up the gas burners (that's right...it's a gas stove), my friend says "won't glass break in hot heat?"  My response?  "Pyrex doesn't break.  It's built not to break."  My friend is still concerned, so our third roommate chimes in saying at most it would bend, it definitely wouldn't break.  The sentence is barely out of her mouth as we hear what sounds like a gun shot...our casserole dish had shattered and all of the liquidy contents had fallen down into the abyss of our stove top!  I started laughing so hard I was crying, my friend was mortified so much that she was actually crying...it was priceless! 
 
Fast forward to my birthday last year and this good friend gave me Jamie Oliver's Jamie at Home cookbook, with a very kind note saying that she loved our time cooking together and then she had tagged some recipes she thought would be nice to try together.  Which brings us to our night with Jamie! 
 
 To Start - Ultimate Mushroom Bruschetta

For those of you with Jamie at Home, you'll find this keeper on page 291.  For those of you who don't, I've included my version below:

Ingredients
  • olive oil
  • 300g mushrooms (wiped clean and sliced)
  • 2 cloves of garlic - 1 minced and 1 halved lengthwise
  • A small handful of thyme, leaves picked off
  • A small handful of parsley leaves
  • Salt
  • Pepper
  • 1/2 of a dried chili, crumbled
  • a pat of butter
  • 1 lemon
  • 4 slices of sourdough bread
Heat your olive oil in a large frying pan on the stove over medium heat.  There should be enough olive oil to easily cover the bottom of the pan.  Add the mushrooms and stir to mix.  Add the chopped garlic, herbs, pinch of salt, couple grinds of pepper and the dried chili and stir.  Cook until the mushrooms get a little bronzed, then add the butter, the juice of 1/2 the lemon and stir.  Toast your bread, then rub it with the halved garlic clove.  Place the mushrooms on top of the bread and dig in!  (Serves 2)

Main - Smoked beets with grilled steak and a cottage cheese dressing
 
This combination was amazing!  However, I'd also split them up and mix them in with other meals as well.  I wasn't so sure about the cottage cheese dressing but it was unbelievable!  I loved it so much that I ended up slathering everything in it, just to get more of it.  For those of you with Jamie at Home, you'll find this recipe on page 109.  I've also included my version below for your viewing pleasure.
 
Ingredients
  • 8 small beets, tops trimmed and peeled
  • small handful of rosemary, leaves picked
  • 1 tbsp red wine vinegar
  • extra virgin olive oil
  • salt and pepper
  • small handful of Italian parsley leaves, chopped
  • small handful of basil leaves, chopped
  • 2 steaks, size of your liking
  • 4 heaping tablespoons of cottage cheese
  • 1 lemon, halved
  • a few sprigs of thyme, leaves removed
Cut the beets up, sprinkle with the rosemary and a couple drizzles of olive oil.  Place them into tinfoil BBQ boats and pop on the BBQ.  Note, they'll probably take 30-40 minutes to cook, so start these puppies early!
 
 
Next, make the dressing.  Put the cottage cheese, lemon juice, finely grated lemon rind, couple glugs of olive oil, thyme leaves, salt and pepper in a bowl and gently combine.  Taste test to see if your taste buds are satisfied and, if not, add a little more of whatever they want!

Now, Jamie suggested rubbing a bit of this dressing onto our steaks.  We did as requested and it wasn't bad, but I found that the steaks stuck to the grill and it didn't add much flavour.  Next time I'd probably season them normally with a bit of salt, pepper and Mrs. Dash, and save the dressing for eating time.

Once the beets are cooked, put them into a bowl and add the red wine vinegar, a small glub of olive oil, salt, pepper and half the parsley and tarragon.  Mix gently to combine, taste test and adjust the ingredients as desired.

To serve, place the beets on a plate, place the steak on top, add a solid dollop of the cottage cheese dressing on top of that and then sprinkle with the remaining herbs.  (Serves 2)

I know, I couldn't tell the difference either.  Nice and simple end to a scrumptious meal.

But serious props go to our friend that kept our taste buds happy while we were creating.  Johnny Q was very tasty and went very nicely with all of our creations.

PazzaRella

For those of you looking for a new food truck to try out this week, I highly recommend PazzaRella.  And by highly recommend, I mean get your butt down there! 

If you didn't guess based on the name, PazzaRella makes wood-fired, thin crust, 10" personal pizzas that leave you wanting more even when your belly is full.  Fresh simple ingredients, a couple of ladies who know their way around making a pizza, and a custom truck complete with a mini-wood fire stove are the perfect recipe for a pizza that rivals the pizza I had in Naples.  My long-legged, fellow food lover who joined me on this adventure said that he thought the pizza was just as good, if not better than, Nicli's but for half the price.  I haven't had the pleasure of going to Nicli's yet, but my food adventure buddy knows his stuff when it comes to food, so I definitely take his word for it!

Things to note: (1) Cash only, (2) Pazzarella is located at Victory Square near Pender and Hamilton, (3) There are plenty of benches to sit on and the park is pretty and relaxing during the day time, and (4) It's a good bang for your buck.  The portion is solid.  If you're famished it might not be quite enough, but if you have a normal appetite and are just a normal hungry, it should be perfect.

My long-legged friend's Diavolo: tomato sauce, fresh mozzarella, hot italian salami, organic basil, extra virgin olive and sliced garlic.  ($9)  My long-legged friend thoroughly enjoyed this pizza and, since we tradesied a piece for a piece, I can vouch that it was amazing!

My prosciutto: tomato sauce, fresh mozzarella, prosciutto, organic baby arugula, extra virgin olive oil.  ($9)  Did I mention that they literally drizzled the olive oil on top of the pizza at the very end?  Heaven on earth!  I can't bring myself to pick a favourite, so you'll just have to go with a friend and partake in tradesies yourself.

View during lunch.  Not too shabby!
