Lentil Salad

This is one of my favourites to make for lunch.  I often eat it on crackers or toast with soup.  It's super quick, easy and oh so yummy.  Enjoy!
 
Ingredients
  • 1 can of lentils, drained and rinsed
  • 1 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 8 sundried tomatoes, chopped
  • Feta - just under a half cup, crumbled
  • Salt and pepper to taste
Whisk together the olive oil, white wine vinegar, salt and pepper.  Add the lentils, sundried tomatoes and feta.  Mix.  Makes about 4-5 servings.  I'll often add chopped red pepper and chopped green onions as well.
